Cauliflower Rice Bowl Recipe

You’ll not only love this bowl for its taste but also for how good it will make you feel. It’s loaded with antioxidants and fiber, and is rich in vitamins and minerals, in addition to healthy monounsaturated fats from avocado and extra-virgin olive oil.

Packed with vitamins and free of preservatives, this flavorful plant-based recipe is a great “transition meal” after a full day cleanse or half day fast.

Pineapple Salsa Ingredients

  • 2 cups fresh pineapple, roughly chopped
  • 1/4 cup chopped red onion
  • 2 tbsp. tightly packed cilantro, chopped
  • ½ tsp crushed red pepper
  • Himalayan pink salt to taste

Pineapple Salsa Directions

  1. Toss ingredients in a bowl until combined.
  2. Adjust salt to taste.
  3. Set aside 6 tbsp of salsa for use with Bowls and reserve extra for later use.

Cilantro Lime Cauliflower Rice Ingredients

  • 2-12 oz. packages of frozen, organic riced cauliflower
  • 2 tbsp. extra-virgin olive oil
  • 1 red onion, chopped3 tbsp. lime juice
  • ¾ cup lightly packed cilantro, chopped
  • ½ tsp garlic powder
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ¼ tsp crushed red pepper
  • Himalayan pink salt to taste

Cilantro Lime Cauliflower Rice Directions

  1. Heat olive oil in a large saucepan. Add chopped onion, and sauté over medium heat until tender and lightly golden.
  2. Add frozen riced cauliflower to onions and mix to combine. Sauté over medium heat until cauliflower rice is fluffy and there is no water left in the pan.
  3. Stir lime juice, ⅓ of cilantro, garlic powder, cumin, coriander, crushed red pepper and salt into the cauliflower mixture. Mix to combine ingredients. Heat until lime juice is absorbed and vegetables are coated with spices.
  4. Remove cauliflower rice from heat. Stir in remaining ⅔ of cilantro and adjust salt to taste.
  5. Set aside Cilantro Lime Cauliflower Rice for use with Bowls.

Bowl Ingredients

  • Cilantro Lime Cauliflower Rice
  • 1-15.5 oz. can of cooked black beans, drained, rinsed, patted dry and heated
  • Avocado, sliced
  • Pineapple Salsa
  • Pumpkin Seeds
  • Cilantro, chopped (for garnish)

Bowl Directions

  1. Divide Cilantro Lime Cauliflower Rice into each bowl.
  2. Add ½ cup of black beans, ¼ of sliced avocado, and 2 tbsp. Pineapple Salsa to each bowl.
  3. Sprinkle with pumpkin seeds and cilantro.
  4. Serve and enjoy!
